NA 1.8 temperature gauge says the car is overheating but I can't see any signs of it being too hot?

As the title says, the car heats up fine to normal temperature then after around 15 to 20 minutes of driving the guage very quickly goes all the way to the hot then after about 5 minutes with the engine off it goes back to normal and stays there. Also when the guage is in the H, there is no sign of overheating as you can see by the lack of any steam in the second picture which makes me think it could be a gauge issue?

So far I've tried:

  • Flushing and bleeding the coolant
  • New thermostat
  • New temperature guage sensor

It's also worth noting that the car shows no signs of head gasket failure, the oil cap doesn't look milky, I'm not losing any coolant and there is no white, sweet smelling smoke coming out of the exhaust.

I've seen some people say it could be a grounding issue but I was wondering if anyone had any experience of this issue before? I'm starting to lose hope to be honest...
