Upgrading gaming pc and would like some input

Hey all

After about 8 years, I'm looking into upgrading my gaming pc for some more recent games.
Before I list my current specs and what I'd like to upgrade + which specific models I'm looking into, a bit more info about what I do/would want to do with the pc:

I don't expect the pc to run every new game until 2035 on max settings and also not planning to jump into every AAA title with the craziest graphics and engines.

Medium to high for most games is plenty for me, I enjoy nice graphics but I enjoy smooth gameplay more and am happy to sacrifice things like photorealistic shaders, lifelike ocean waves and depth view by turning down the settings a bit in order to have a smoother gameplay experience.

Currently I'm looking into playing Clair Obscur and Windrose as likely most demanding games. Several other games I play like Age of Empires 2 DE, The Binding of Isaac: Rebirth and Terraria are less demanding and for the latter that would probably even play well on a rotten potato.
Some moderately intensive ones (especially on the CPU I believe) are games like Stellaris and Civilization VI.
Others in a similar category but both CPU/GPU intensive (if I understand correctly) are Battlefield V (possibly 6 too in the future), Hades 2 and No Man's Sky

Current specs:

  • Case: Phanteks Eclipse P300 Air Midi-Tower
  • MOBO: Gigabyte B450 Aorus Elite (socket M4)
  • CPU: AMD Ryzen 5 3600 6-core (no separate cooler, came with CPU. Currently not overclocked)
  • GPU: Nvidia GeForce RTX2060
  • RAM: Corsair Vengeance LLPX (2x16) 32GB DDR4 3200Mhz
  • PSU: Fractal Design Ion+ 560W Platinum
  • SSD: Gigabyte M.2 512GB NVME
  • OS: Windows 11 Pro
  • Monitors: 2x ASUS TUF Gaming VG259Q 24.5" 1920x1080 / 144Hz (DisplayPort connected atm)

To remain on a bit of a budget and not upgrading unnecessary components, I'm looking into upgrading CPU & GPU.
If possible I'd prefer to not have to change the MOBO.
To be honest I'm not informed enough to know what to look for in a CPU (I do prefer AMD over Intel). The differences between Ryzen 3, 5, 7, 9 are not clear enough to me and I'm just looking at benchmarks to base my thought process on.
Below I'm listing the products I looked into for CPU:

  • AMD Ryzen 5 5600X 3.7 Ghz 6-core
  • AMD Ryzen 7 5800X 3.8 Ghz 8-core
  • AMD Ryzen 9 5900X 3.7Ghz 12-core (unclear if that works with current MoBo. In theory yes but not fully supported?)

GPU:

Honestly I'm lost between all these manufacturers. I've liked my Nvidia GeForce card so far but all these card models and manufacturers are too much.
Nvidia GeForce RTX 3060 TI is one I looked into but I'm not loyal to a fault to Nvidia and they probably overprice their GPUs compared to their competitors

Budget:

willing to throw down around €800 for CPU & GPU. Stretchable to 1000 if really needed.

Would anyone with more knowledge be able to help me out?
I'm based in West-EU

Thanks
