Apart from Kerouac's novels, I can mention Dream of the Red Chamber, one of the most important novels in Chinese Literature. Any other suggestions? Please notice that I am not asking about religious texts but about literary masterpieces which are inspired by Buddhism but may also not directly mention Buddha or the Dharma.
