Seasonal county health job vs CRC with Emory

For background I got my mph in epi in December. I got hired as a seasonal environmental health support with Georgia Department of Public Health (DPH)and specifically with DeKalb County in Atlanta. This would run until September. I started already (2nd day) however I am currently interviewing with Emory as a CRC 1 with the oncology department. This would be a full time job. It's probably better to take the full-time permanent job, however I already took the county job and started. I also feel like it's a better foot in the door since it's DPH as well, and I absolutely do not want to burn any bridges with them by already leaving. I can't even imagine how awkward that would be. Both places took more than 50 applications each since December to get this far. The pay is essentially the same (20 an hour vs 21) however I prioritize career outlook more.

I have an MPH in epidemiology. I got a part time job as a parks & rec leader with my county just while I apply to other jobs. I've been here a week. This morning I received a job offer as a seasonal employee with an adjacent county in their health department. I plan on taking it however I am also waiting to hear back from Emory hospital for a full time job (my dream job atm). I feel so awkward because I have to leave this park & recs job after 1 week. I don't want to burn bridges because it's government and my own county. Also, I am receiving the seasonal job offer letter today and have 24 hours to sign. The thing is, if I find out I get the Emory job next week or two, I will leave the seasonal job for that. I would basically be leaving 2 jobs within a week, both being with the county. I would accept the seasonal job because there's a chance I don't get the Emory one however I do think I'll get it. Should I just decline the seasonal job and hope I get the Emory one? It would only be thru August and while it's public health, I am beyond overqualified. It does however put me into Georgia department of public health which is a good thing.
