I usually cook my steak in small bite sized pieces (korean bbq style; more surface area for more maillard reaction). If i have leftovers, I usually just save them in the fridge for the next day. I noticed that when I reheat these steak pieces SPECIFICALLY in the air fryer, the steak obviously loses some tenderness, but the beefy flavor in the steak becomes extremely concentrated and somehow amplifies the flavor by 5x. Can anyone explain why?
