Best local wine shops in Dallas for serious wine selection?

I’ll be in Dallas for a few days and want to visit one or two great local wine stores.
I’m interested in Bordeaux, Barolo/Brunello, Super Tuscans, Rhone, Burgundy, Champagne, and napa. Ideally shops with deep selection, knowledgeable staff, fair pricing, and maybe some mature/back-vintage or closeout bottles.
I already have Pogo’s and Eataly Vino on my list. Are those the right priorities, or are there other Dallas-area shops I should not miss?

Also happy to hear which stores are best for:
serious collector bottles
Italian wine
mature Bordeaux / Rhone/ Burgundy
best values or hidden gems
