Looking for celiac safe ideas for meals

I have celiac disease and run my own business (a celiac safe bakery). Sometimes at the end of the day (especially now in the Canadian Thanksgiving chaos) I have ZERO, ZILCH, maybe even NEGATIVE SPOONS to feed myself. And what sucks is I can’t just grab a pack of ramen because I’m celiac and I can’t grab a kraft dinner cup because diary makes me sick. Lately my go to has been to buy a bag of frozen, sliced, fully cooked chicken breast and bags of microwave rice. Then I just microwave the rice, heat up the chicken, and dump on coconut aminos.

Anyone else have fast easy gluten and dairy free ideas???

How to make a coon feel safe and at home

Hey folks. I adopted a beagle blue tick coon mix about two years ago (the one curled in the bed while his boxer lab brother rolls around taunting him to wake up and play). You folks have given me great advice on how to keep him entertained when we are stuck inside during crazy winters in Ontario. So now I’m looking for some new guidance

As our dude has settled in we are now finally seeing his full personality as he realizes he won’t be moved again. Now we didn’t get a huge back story on him when we got him other than that the original owners had a newborn and he was uncontrollable for walks. No idea if there was any kind of abuses. He walks totally fine with us and has slowly developed a pretty reliable recall…assuming there isn’t any wildlife in the area. What we have noticed are two things:

  1. he seems very frightened and insecure with everything. Thunder, shouting voices, loud vehicles, even his first time meeting a fox and a turkey he was scared. How can I help him build confidence. I’ve never had a timid dog
  2. you must be within eyeshight of him. He seems to get very anxious that he might be missing out on an adventure or something if you just leave the room to blow your nose! lol. I mean it’s kinda cute but at the same time I’m concerned it could get out of hand as he has started baying and howling as I pack for farmers markets that I work at knowing I will be leaving.

What can we do to help make this little man have some self confidence and feel safe to just chill with his brother in another room?
