Zero Energy "Lunch"

I'm really new to running out of spoons and I'm used to just pushing myself, so I'm trying to explore subreddits like this to help me normalize some stuff. If I don't have enough energy to cook I normally just skip but I'm trying to be better about that so I had whatever this conglomeration is for lunch. It's french onion dip, and entire cucumber, some chips, and a single slice of American cheese. I don't know if this really technically counts as a meal so I would love to hear opinions about that, but I'm just very happy I didn't skip and grabbed something healthy like the cucumber :)

Homemade Lunchables

Jalapeño colby jack + honey ham + Triscuits + lemon seltzer. Spent less than 5 minutes assembling.

I went back for a 2nd full plate afterward. 😁

Very low spoon cheese+crackers+fruit board (plate)

  1. Some fancy crackers, could be any crackers but fancier ones make it more fun; 2. spreadable brie, I used a Mini Brie Bite from Trader Joe’s, already comes in single servings so it’s convenient. Other cheeses work too; 3. fruit jelly/jam of your choice. I just used one of those tiny Smucker’s jam packets they have at diners lol, but any fruit spread works (I recommend apricot). Variation: instead of fruit, top with an olive and a small drizzle of olive oil :)

Steamables >>

Cheap and only takes 5 mins in the microwave and it’s ready to eat. I added Parmesan and extra sauce and it was sooooo good!! (I also really love the edamame steamable). I’ve been having trouble getting enough veggies because I can’t cook without having a flare up and fresh veggies go bad so fast so this has been perfect for me :)

Cheap, easy and filling

Canned chick peas- drained, jarred butter chicken sauce and minute rice. Also happened to have some naan bread.
Could spruce this up with some spinach or even some diced canned potatoes. I am sharing with my 9 year old, so I didn’t go too crazy.

Hot girl slop

But I’ve been doing my minimum effort possible spin on it for meal prepping, and I’ve come to calling it hot girl slop 💅

In theory only need a pot to make this, and takes like just how long it takes to sauté onions. Foodvisor says the pictured plate is 430 calories, 35g protein, 15g fiber.

🧅Sauté 1/2 an onion (you could buy precut onions if you’re looking for min effort)
🧄Add garlic (amount: iykyk. minced garlic from a jar babes)
🍅Add 1 container cherry tomatoes (I cut in half bc I don’t like unexpected squirts of a whole tomato)
🍝Add like half a small can of tomato paste (pro tip: put the leftover half in a ziploc bag and freeze it for next time you make this)
🫘Add 2 cans of beans (literally any bean, white, kidney, chickpeas, mr.’s)
🫙take a container of tofu (silken best but any could work) and either like shred and smash it all up in the container (less dishes) or blend it (silken & blended looks more Michelin star worthy), include some water in that to loosen it up, and add to pot
🌾Add nutritional yeast to your own desire (nooch)
🧂Add salt and pepper (AT LEAST, please 🙏🏻) and whatever other spices that spark your fancy, I usually do garlic powder, paprika, cayenne, cumin
🥘Mix this all up in the pot, and cook till the whole pool is a jacuzzi and you’re done.
🍛This makes enough for like 3-4 servings. Serve with rice, bread or a veggie to spice it up

Will not send picture of myself to prove I am a hot girl but please use hot girl slop to describe any random thrown together meal prep you make

Any ideas?

I bought this and loving it! Coz it's much easier and fresher than rinsing and handling a real potato.

But since it's frozen it's got that watery squishy moisture when you microwave it sometimes...

And using a air fryer/oven is too much effort for me, so I only tried it using the microwave and ate it with some salt and sugar.

I also tried putting them in a soup but I'm not a good soup cooker so I don't really know which soup goes well with potatos.(I'm asian so I've never rlly tried soup other than what I made)

Tldr; Anyone else tried this product? Any recipe recommendations?

Don’t underestimate frozen veg

My low spoons lunch today: cold leftover Korean fried chicken, and leftover quick pickled cucumbers from last night (partner made the cucumbers). I wanted something to round that out but didn’t want to make rice so I went with some frozen mixed veg I threw in the microwave for a few minutes and then put on a little butter and salt. They were actually pretty nice. I often forget we have them, but we got a giant bag at Costco and they’re great to throw in ramen or other soups or fried rice, or even just microwaved on their own for an extra serving of veggies.

I was coping with my food restrictions up until garlic, now I'm struggling. The full list of things I'm reacting to is:
Wheat
Dairy
Eggs

What easy meal ideas does anyone have?

I have been thankful for rice, potatoes, beans, meat, and baby food fruit/veg puree packets (non-banana ones), as those have all been going well. And cashew-based ice cream. I know there are people here who have much worse restrictions, and my heart goes out to you.

I miss creamy food and flavour. So much pre-made food and sauce has garlic. I can stand at the stove for about 20 minutes, thankfully, so I do have a bit of energy to work with for cooking on a good day.

I have ME/CFS, and I don't understand why this is happening to me-- all of these foods give me mouth sores, and then a migraine if I eat enough of it. It started with just wheat for about 15 years, and then slowly more foods started to give the same reaction. It's a hot sinus swelling and neck pain that seem to trigger the migraine. Or at least hit before the headache part of it. I'm starting LDN for the first time and wondering if it might calm things down so I can eat more foods again. I'd be glad to any insight on that too.

TL;DR looking for meal ideas.

Another Aldi discovery: Long Grain & Wild Rice (microwave)

Aldi opened across the street from me a few months ago and I've been slowly trying new things. I often get their microwave brown rice or Spanish rice, but this one is new to me and I like it! Long grain rice and wild rice, has sort of an "herb flavor Stove Top Stuffing" vibe.

I also like the Aldi microwavable stuffed chicken. It's not beautiful but it's decent comfort food, and I can literally have warm dinner in 5 minutes with these (and leftovers for lunch). I ate the whole packet of wild rice blend, and it was very satisfying. 😄 Brown rice with the rest of the chicken for tomorrow.

That wild rice blend would probably be really nice with roasted or sauteed veggies mixed in, like mushrooms or green cabbage. Will definitely buy it again.

Need help with cheap, low sodium, no liquid meals please

So, my husband was just released from ICU with a restricted diet. 1500 mg sodium per day, 6:cups of liquid (including that of which is "in" the food itself). I'm not much of a cook, and until now, most of the foods we ate included lunch meat sandwiches, canned soup and cheap oven ready meals. We currently only own one skillet and a sheet pan for the oven. Hopefully we will be able to acquire a crockpot soon. We are religiously no pork/no shellfish . We are disabled, and require pretty easily assembled, quick cooking meals preferably. I am so struggling with this.

I've ordered eggs, potatoes, rice, a whole chicken, frozen tilapia, frozen bag of broccoli/cauliflower/carrots, a salt free garlic herb blend, and a box of low sodium veggie burgers. I'm open to new grocery ideas (please) for our next paycheck. I've never meal prepped, but I do have gallon plastic bags that I can use for prepping (no type of "Tupperware" for storage) if you have any ideas? What else can we do? What about cheap meals for a crockpot? I need strictly low budget. Please help!

The best and easiest tips/tricks to get your veggies in daily?

I know there are options like throwing broccoli in the air fryer or microwave etc. but I’m wondering if there are any other ways to get your vegetable intake in daily that is quick and easy and not much work (I unfortunately consider prepping to put in the air fryer then cleaning the air fryer all to be too much work some days). I wish there was just a drink I can have everyday that covers it all (which maybe there is!!)
