Easy Carrot and Red Lentil Soup.

Easy to make and budget friendly soup. Freezes well.

• Ingredient.

• 1- 2 tbsps. sun dried tomato oil or oil.

• 100g well, diced onion

• 3-4 grated or well, diced cloves garlic

• 1 stick/rib of celery.

• 2-3 bay leaves

• 125g peeled and thinly sliced carrots.

• 250g red lentils

1 litre chicken or vegetable stock.

Method.

• Heat the sun dried oil or oil in a large saucepan.

• Stir in the garlic, onion, celery and carrot - saute unti soft.

• Add the bay leaves with the stock, mix well to combine.

• Bring to a boil, cover then lower the heat and simmer for 20 minutes.

• Turn off the heat, cool slightly then remove and discard the bay leaves

• Blitz with a stick blender until a desired consistency has been achieved - adding more stock or water if required.

• Serve topped freshly snipped leaves, black pepper and crispy bread.

• Leftovers freeze well.

Mashed Banana and Jam Sandwich.

Ingredients.

• 2 slices of bread

• 1 ripe, mashed banana

• Strawberry or blueberry jam

Method

• Spread jam over both slices of the bread.

• Top one slice of the bread with the mashed banana.

• Close sandwich with the remaining slice of bread.

• Eat as is or can be lightly toasted in a sandwich press.

• Enjoy.

Easy Green Pea Soup

Easy and budget friendly soup made from dried green peas and chicken stock. Leftovers freeze well for a quick meal to enjoy with a cheese sandwich.

Ingredients

​

• 1 tbsp. oil

​

• 1 large, well diced onion

​

• 2-3 diced, garlic cloves

​

• 2-3 bay leaves

​

• 1 large, well diced stick/stalk celery

​

• 2 cups dried green peas.

​

• 1 medium, peeled and well diced potato.

​

• 1.5 litres chicken or vegetable stock.

​

Method.

​

• Cover and soak the dried peas in stock for approx. 1 hour.

​

• Heat oil in a large a large saucpan, saute the garlic, celery and onion until soft.

​

• Do not drain the soaked peas, just add to the pot with the soaking fluid.

​

• Stir in the potato and the remaining stock with the bay leaves.

​

• Give a good stir to combine and bring to a boil, then lower the heat and simmer until the peas are soft.

​

• Cool slightly and then blitz to achieve a desired consistency - carefully add more water or stock if required.

​

• Serve topped with black pepper, grated cheese and bread.

Make up a batter with 100 grams SR flour, 1 tbsp sugar, 75 ml milk - mix until smooth. Grease a hot griddle with a little butter. Dollop on a tbsp batter, cook for 2-3 minutes, flip and cook other side. Serve hot with jam, syrup or butter.
