About lossless audio and dac

I am trying to understand how lossless files work so I am going to write down what I understood

So you record the analog sound with adc and it becames a digital file like wav, flac, etc... that analog sound is considered lossless and in order to reach that sound you have to convert that digital file to analog again. Is that why we need a dac ? I am pretty sure it is more complicated and might not be accurate but this is what I understood so far.

Also, music from itunes are m4a files when you download them and I guess they are in aac format but does a dac make a difference with lossy audio like them ?

I love the song they put on for the ending. (Under the pressure) Also it is very convenient that they chose a song from a band called "the war on drugs" while bojack goes on a journey to sober up.
