I just got this Zacme 8.4 qt commercial stand mixer that has a tilt head. The head will lock down in the correct position with the beater in the bowl but if you put a little upward force on the head it will raise up a few centimeters which puts the beaters out of ideal position. I suspect this may just be a defective mixer and will probably contact the manufacturer to get advice. Does anyone else have this mixer and had the same problem?

I have a KitchenAid Classic stand mixer which has a bowl with a capacity of 4.5 quarts. If I want to double a normal cookie recipe that makes about 36 cookies, could I use the larger lift mixers with a 5.5 quart capacity or would I need to use a larger 7 quart size bowl?
