I'm struggling a bit with the adversaries from the core book, can anyone suggest any of them that are singular big monsters that will be a fun fight against a group of 4 to 5 at Tier 1 or 2?

My brain just isn't picking them out well, and I don't really understand the classifications like Solo etc.

Open to third party stuff, or just suggestions on how to 'up' whats in the book.
