
1st Time Cooking Pokeweed
Hi! Harvested these beauties in my backyard, and began peeling the skin off, but I wanted to know if I only needed to peel the fibrous pink tinted skin or should I go deeper with my vegetable peeler? The stalk on the left is fully peeled and the one on the right is not for reference. I know to parboil at least twice through, but any other insight is appreciated, thanks in advance!
