Post Workout Meal

For the past week, I’ve been eating dinner/my post workout meal at the gym since I don’t live close by.

Chicken meatballs (store bought) baked in the oven according to the directions on the package, steamed sweet peas and and jasmine rice 😋

Lunch Meal Prep

Teriyaki chicken, baby Bok Choy with sweet peppers and udon noodles 😋

• Sauté chicken in olive oil (season as you like)
• wash Bok Choy thoroughly
• boil pot of water and drop in Bok Choy for 1 minute, remove and set aside
•in a wok add in olive oil, garlic, sweet peppers, and purple onion, stir fry to your preferred tenderness
• add in Bok Choy with stir fry sauce and toss in udon noodles and cook on medium heat cover until noodles are tender (follow package directions)
• dice your chicken and add to wok with veggies and sauce

Dinner Meal Prep

Chicken meatballs, mashed potatoes(store bought) and steamed peas and carrots 😋 The chicken meatballs are from Costco and I love this flavor. I bought 3 packs 😅

Everything was store bought so no recipe to speak of, just followed the package directions 👍

Lunch & Dinner

Lunch: Rigatoni Alfredo with grilled chicken and broccoli

(boil the pasta, drain and add your choice of Alfredo sauce and reduce heat to simmer, add grilled chicken and frozen broccoli, cover and let simmer until broccoli reaches your desired tenderness)

Dinner: Lean ground beef stir fry w/ udon noodles, red, orange & yellow peppers and broccoli

(Brown 3lbs of lean ground beef, when cooked, remove and add all the vegetables and stir fry in avocado oil, add in cooked udon noodles and your choice of stir fry sauce until everything is fully incorporated)

Lunch is Rigatoni Alfredo with grilled chicken and broccoli.

Dinner is a lean ground beef stir fry with udon noodles, orange and yellow bell peppers and broccoli.

The best I could do this week

Ground chicken, rigatoni pasta, Alfredo sauce and broccoli 😋 with a lil Cajun seasoning because it needed some spice 😉
