First time growing, do “cayenne” need to go orange or can they be left green?

I got this “cayenne” from a garden store. Every cayenne I’ve seen only looks way longer than the peppers on this plant do, but I’m gonna ignore that for now.

What are the main difference between orange and green?! The picture has them both orange and green so not sure what the diff is!

I'm looking to try and starting cross breeding some chillies i'm growing outdoors and it had me thinking about how to continue to grow some of those hybrids over winter.

In the UK this cannot be done outdoors to the conditions. Can I achieve the same thing by using grow lights and maybe a heated mat / indoor green house to achieve the growing of the hybrids ready for summer planting? Has anyone had any success with this?

I have found a few recommended lights etc on the sub but just wondering if anyone UK based has had any success?

Can anyone help?

I water once every few days. They get morning sun from 6am to 1pm ish. I don’t think it’s over watered but maybe the pots are too big?

They were plugs and not grown by me from seed.
