Intolerance, food triggers and exhaustion

Hi everyone,
I’m looking for advice and experiences from people who have been dealing with chronic digestive issues for a long time.
For several years, I’ve been struggling with chronic diarrhea, food intolerances, and increasing anxiety around food. At this point, my diet has become extremely restricted.

Known intolerances:
Fructose
Sorbitol
Lactose
Histamine

Foods I usually tolerate:
Potatoes
Sweet potatoes
Plain pasta
Oat yoghurt 
Poultry (chicken/turkey)
Small amounts of blueberries and blackberries

Many other foods can trigger digestive symptoms, and sometimes I experience sudden episodes of severe diarrhea that leave me exhausted for the rest of the day.

Over time, this has also affected my mental health. I often feel stressed, internally restless, hyper-aware of every physical sensation, and anxious about trying new foods or leaving the house when my symptoms are active.

I’ve had medical workups, but I still don’t feel like I have clear answers. Sometimes I wonder whether my gut and nervous system are now trapped in a vicious cycle where digestive symptoms increase anxiety and anxiety worsens the digestive symptoms.

Has anyone experienced something similar? What helped you the most
improving your gut health / calming the gut-brain axis / expanding your diet again / reducing chronic diarrhea?

I’d really appreciate hearing from people who have managed to improve after being stuck in this situation for a long time.
