Meal ideas on doxy (Lyme) - low meat, low effort

Been a lurker and learner here for a while. Need help! I’m a late 30s woman and need ideas for solo meals that are very low effort with good nutrients and protein/fat (low carb if possible but not necessary). i usually eat meat but its been harder to digest so meat is ok but ideally would love some low meat ideas too

am on doxy so my GI is all over the place but generally am pretty low maintenance digestively. This antibiotic is no joke!

gonna get a rotisserie chicken and some dips/spreads to eat with charcuterie items (girl dinner) but what meals can I easily prep in like 10-15 min when I have energy? I’m generally very comfortable in the kitchen so having this kind of kitchen brain block is frustrating! I’m well stocked w spices / herbs / fridge staples etc

Lyme testing?

Having all the main symptoms so I’m gonna go to the hospital walk in tomorrow but is there somewhere that does a range of Lyme testing that’s better than others? any Lyme doctors to know about if it turns out positive? thank you! kinda freaking out but trying not to.
