Need a very durable kitchen countertop option

I'm finally renovating my kitchen and I'm looking for a highly durable countertop stone. I coom and bake a LOT and I use a ton of spices and oils, cocoa powder, turmeric etc so I need the countertops to be stain resistant, heat resistant and durable. Any recomendations whether I should go for quartzite or porcelain?

I held off on renovating for a long time because my existing kitchen countertop is very durable and has withstood a ton of heavy usage over the years. I'm not sure whether it's granite or marble because it looks like granite but lemon juice leaves a white residue on it. I'm attaching a picture in case someone can identify whether it's a marble because I've gotten very good use out of it and wouldn't mind the same material if I can get a colour upgrade.
