Balance of Grim Hollow: Player pack?

As per the title, I was wondering on whether the balance of the player pack is generally decent. Dndbeyond partnered content tends to be checked a little less as its considered more 'official' than regular homebrew content, but some books on there (Book of Ebon Tides) are pretty awfully balanced. I like having some darker options available though and the vibes look good so I was curious if anyone has any experience with it.

Hello, I am someone who likes cooking, but I tend to struggle with executive function. Currently, I am using my brother's knives, he lives with us and knows how to sharpen them (occasionally) using a whetstone. I know that he is looking to move out, and before long I will as well, but I want to set things up for myself so I can continue enjoying my hobby, which means I need to keep my knife sharp. The issue is that I am unimpressive when it comes to precision or hand-eye coordination, and I don't know if I will have the time or energy to invest several hours learning to use something like a whetstone.

I've been considering getting a Horl classic (with the care kit) because I've heard some good things, but it is very expensive, and the opinions I've seen on here aren't raving. When I've mentioned it to my brother he said I should just get a more expensive knife instead, and use a cheaper sharpening method, since that way the edge will retain much longer.

Since I am very uninformed, I consider it best to ask on here, what are some (somewhat affordable I think the price for Horl is kind of outrageous but I don't know good alternatives) low barrier to entry methods to sharpen a knife and retain the edge?
