This was outrageously easy for an elevated weeknight dish. Key here is to use ripe, juicy tomatoes. Trader Joe’s crispy shallots on top.

I am not an egg salad lover- this converted me! Added a sprinkle of paprika and maybe will try a dash of hot sauce next time. Very fresh and filling!

What kind of bee is this? We are planning on leaving the hive alone but curious- never seen this before
