I don't know if I should take my cat to the vet

During the summer of 2024 my cat got really sick very suddenly. She stopped eating, her fur became dull and it was full of dandruff, she hid behind my bed the whole day, she drank a lot and threw up a few times. At the vet they diagnosed her with acute kidney disease with no apparent cause, since she doesn't go outside at all and has no access to poisonous plants or food. Her bloodwork was HORRIBLE, the numbers were so bad that the vet put her on the euthanasia list(I didn't wish for her to suffer), because she said she has never seen a cat come back from numbers half this bad. She got an infusion and we waited for the next day and miraculously she recovered with no lasting damage to her kidney.

The problem is that even for a simple examination she needs to be given tranquilizers, because she is simply too strong willed and scared at the vet. She won't let them examine her and it's obviously a terrifying and traumatic experience for her every time. She was half dead on the table during her sickness, and she was still fighting the vets with all that she had.

Nowadays I started noticing dandruff on her fur and I am really worried that she is getting sick again. She is eating as usual, running around and not hiding, but I am still worried about her health. I took her to the vet a few weeks ago and they said I should only return for a bloodwork if I see her acting unusual, but I can't help thinking that she is getting sick again. I don't want to traumatise her with the whole ordeal of getting her blood taken but I am also really scared that she is going to get sick again. She is now 7 years old, but I don't think that's old for an indoor cat. I take really good care of her, she has everything she needs from high quality food to an outside catio and I really don't want to disturb her peace with going to the vet for no reason. Are there any other reasons her fur could be getting dandruffy?
