Family of 4 YYZ to Europe - economy or premium?

We are planning a trip to Tallinn, then returning from Amsterdam December 2027. We expect to have enough points for Premium Economy one way and economy on the other. I believe that business is likely not a viable option for 4 (kids will be 5 and 7), though that would be amazing since it’s a big milestone year for our family. We are prepared to book the flight right at the booking window open knowing that we are traveling peak holiday season.
We were thinking doing PE on the outbound as it is a red eye and thought that we’d be more comfortable sleeping on the wider seats, but from some research I’m finding that those arm rests are fixed. I’m now second guessing and maybe we should do premium on the return? Or maybe it doesn’t matter at all and our best choice for optimizing for our situation is do economy both ways?
Would appreciate insight from those who are more well traveled and well experienced in this. The main leg in question is the YYZ-Europe (leaving this generic, bec we are actually starting from Halifax and unsure which layover works for us best) and return. I’ve also seen some mixed business options - economy on the long haul, business from Amsterdam to Tallinn (as an example) that we would have sufficient points for.
