Going WAY out of my comfort zone. Salsa Verde chicken with a homemade salsa, roasted zucchini, and elotes for dinner with my wife.

Today was the first time we could have dinner together in 5 days. (Too many consecutive 12 hour midnight shifts combined with a 75 minute drive each way.) I decided to try something new. It turned out well, at least taste wise. My presentation still needs a little work.

My wife woke me up at 5:00 AM because her TV wouldn't work. My doctor told me that I will need hernia repair surgery. It snowed today, winter just will not end. I won't let it get me down. Meal prep for the weekend with a lasagna and a meatloaf.

My wife did make it up to me for her waking me up so early, so it was worth it. Working 12 hour shifts the next 4 days, so now all she will have to do are the sides this weekend.
