Handling Humidity
I took my macaron class last September, so I’m coming up on my first summer making them in Virginia, a commonwealth not know for its deserts. How do people deal with the humidity in the summer? I can’t bear the thought of not making them (as I faint dramatically into my chaise).
I usually run the overhead fan to assist in drying the surface, and wonder if anyone has set up a room-size dehumidifier (assuming these are a thing) for a day or so before making them in the humidity. I made them once during a super rainy period just to see how it would go and it was not pretty. Thanks for your ideas ;)
