Buying advice, newcomer

Hello (thinkpad) world!

The short of it is that I am looking to switch to a thinkpad from a macbook. For some context, I currently have a mid-2014 macbook pro (retina, it will come up) and I am a student but also a photographer. I am not a professional photographer at the moment, but I have worked professionally and would like to do so again in the future.

I am mostly looking to switch for three main reasons. One, I really like how linux runs on my steam deck and I would like to use it on a laptop. Two, my current machine can't update past MacOS Big Sur which limits what apps I have access to, and beyond that because of apple's push to end Intel support I would imagine I will be cut off from more of my apps, or any other ones I might want to use in the future. I have already given up a few. And three, I frankly am not a fan of apple's recent product philosophy or the new OS or the AI push, and linux seems cool.

In terms of the specs, the two I am most focused on are the CPU and the RAM.

In terms of a CPU, I gather as long as it is a newer gen CUP, like 11th, then the difference between an i5 and an i7 can be pretty small, but would something like that be of much importance for me? I think as long as the CPU is quad core it will perform better than the one I've got, but I would like to get one that could last me about 5-7 years before it is unusable. What are your recommendations? Also, what about AMD? I had seen that some of the AMD machines have completely soldered ram; which if I get one that comes with enough wouldn't be a problem, and would be faster, no?

In terms of the RAM, 16g to 32gb is about where I am willing to be. I find myself hard pressed to think what I might use 32gb for, but my current machine with 16 runs sluggishly enough for it to be noticeable, and with not much workload. Now, that could be a mix of things from the OS how much free space my disk has, but I digress.

I am wondering what specs setup would fit my needs for this machine, as I will be hopefully doing photo work but also (beyond basic stuff like web browsing, note taking, writing), my thinking is that in case I need a specific program (either for photo work or for school, doing a masters in applied/theoretical linguistics FWIW) I would like to have the ability to run windows on a virtual machine or from a separate drive or something--would that alone warrant having 32 gigs of RAM?

Most of my research has led me to think that a thinkpad would be a pretty solid choice. For both price reasons and durability, repairability, etc. My price range is pretty low, ideally under 200-300€ for a used model, but hopefully scoring a deal closer to 150€; but am willing to spend more on upgrading it. The models I have been looking at are the:

T480, which everyone lauds but some people say the 8th gen processor is just too slow these days

T14 g2, I have seen i and s models; maybe the s would be more comfortable coming from a Macbook?

and the P51, again there are s models, etc.

The last caveat is really the screen. Sí o sí, I need to do a screen mod when I get it, especially for photo stuff. I do have a pretty solid monitor from BENQ that I could use in the meantime, but having a screen that is both 100% color accurate and bright enough to at least use in a coffee shop are things I don't think I could pass up. I know it will be hard to match the apple retina screen (see?), it even took them a while to get back to that level of quality, so I would like to know what you think. Is that a realistic goal? Should I just try and focus on using the monitor for photo work?

Lay your suggestions on me! I will take any input.
