Farmer's market box was not as advertised. What should I make?

Local organization sells cheap bulk produce boxes. They're pre-ordered, and this week I was expecting shishito peppers and tomatillos, so I picked up ingredients for some salsa. Ended up coming home with about 20 green bell peppers and 2 lbs of sweet peppers.

So what to make? I'm not generally a fan of green bell peppers so I'm looking at this as an opportunity to get excited about them.
