kitchen gadgets that's worth buying and not waste of space?

i am trying to downsize my apartment kitchen because my drawers are literally overflowing with random tools i bought after watching late night food videos. most of it is just junk that does one hyper specific thing like a garlic peeler tube or an avocado slicer that takes longer to wash than it does to just use a regular knife. i am completely over the clutter and want to strip everything down to just the absolute essentials.

the only random thing i bought that i actually use every single time i cook is a small handheld milk frother, not even for coffee but for mixing up sauces and dressings really fast without pulling out a giant blender. it made me realize how nice it is to have small, cheap tools that actually make a difference instead of giant appliances that just sit on the counter gathering dust.
