Tempeh protein muffins- advice?

Hi all!

I went vegan almost a year ago and have since been pretty satisfied with my meal planning overall. The one thing bothering me was my protein intake.

Recently I've been trying to figure out a recipe that gets most of my daily protein into one meal (breakfast) and have ended up with these smoky tempeh muffins. Ingredients (per muffin) as follows: 100g tempeh, 15g quinoa, 15g gram flour, 10g chia seeds, 10g hemp seeds and 5g nooch, plus falafel spices, turmeric, paprika and fennel.

The muffins come to about 400kcals and 32g protein for each one, about 80% of my recommended daily protein intake.

I'm mostly just looking for advice- can these be improved at all? I realise that they're pretty vegetable-barren but I get most of my fruit and veggies from lunch and dinner anyway. Should I be diversifying the protein sources or adding any more complete proteins? Any advice would be appreciated! Many thanks :)
