I'm making a dumplings of the world cookbook named "Everyone has a Dumpling". I'd love to get feedback from the community that loves cookbooks as much at you all. This started with a simple idea and silly argument with family. just about every culture on earth has some form of a dumpling, which naturally lead to the argument, what counts as a dumpling.

Hi everyone — long-time lurker, and someone who thinks about dumplings more than is probably healthy.

I'm writing a cookbook called Everyone Has a Dumpling. The premise is one I think this sub will recognize instantly: almost every culture on earth, with no contact between them, independently landed on the same idea — dough, something good, heat. It's as much a world atlas and a history as a recipe book, and I'm trying to get the cooking dead-accurate while keeping the writing actually fun to read.

This is one sample chapter, "The Bite" — the East Asian wrapped dumplings built for the perfect mouthful: jiaozi, gyoza, mandu, wonton, xiaolongbao, and the dim-sum three (har gow, siu mai, fun gor). Each gets a headnote, a full recipe, and a little "key decisions" table where I lay out what cooks actually argue about — dough water temperature, how to trap the soup inside an XLB, how hard to wring the cabbage — and where I landed and why. There's also a folding guide, because the fold is the whole craft.

I'd really value your feedback, the blunt kind especially:

  • Would you cook from these? Anything fussy, wrong, or missing?
  • The writing — does it make you want to keep reading, or is it too much?
  • The folds — accurate? Anything that'd make a real pleater wince?

A few honest things: it's a draft, the illustrations are rough (please ignore the typos in the art — they're on the fix list), and I'm not selling anything — no preorder, no link, no email list. I just want it to be good, and you're the people who'd know.
