Ok so yeah I tested again and the problem persists(Rock Only Challenge)

So unfortunately this challenge is not possible without leveling up my Strength. The problem stems from the upgraded enemy types. They just love to soak up so many of my rocks. Then you have the ones that heal themselves if you don't kill them in time. This clip is an example, and that was after leveling my strength up by 5. Don't even get me started on the Guardian enemies.

Guardian Demigoblins are the worst thing to throw my rocks at(Rock Only Challenge)

I feel like I'm wasting over 100 rocks on these tanks. It's even worse when you get 2 in one room😭

We have a problem(Rock Only Challenge)

So while doing the final dungeon, I ended up running out of rocks. The enemies kept blocking my attacks and some of them even healed themselves(I didn't know they could do that), so I might have to raise my strength stat a little. Probably just by 5 levels though. Sad Times.
