Anyone ever use a Santee Cooper rig in the surf for big fish with cut bait?

I’m heading to Assateague tomorrow and was thinking about trying a Santee Cooper rig in the surf instead of a traditional fish finder rig.

My setup would be:
Sliding Sputnik sinker above the swivel
Santee Cooper rig with a peg float and rattle
7/0 circle hook

Fresh cut mullet, bunker, or spot
The idea is to let the Sputnik hold bottom while the float keeps the bait slightly off the bottom to help with crabs and improve presentation.

Has anyone used this setup in the surf for bigger fish like:
Red drum
Striped bass
Sharks
Rays
Big bluefish

How did it compare to a standard fish finder rig? Did the float help, or is it just unnecessary in the surf?
Any tips or modifications would be appreciated!

Hi - Low Rig VS Pompano Rig

Need some Assateague surf fishing advice — high/low rig vs pompano rig for kingfish/croaker/spot
Went to Assateague a couple weeks ago and got skunked, so I’m trying to figure out what I should change.

I was using a high/low rig with Bear-Paw snelled 1/0 circle hooks, a 3 oz pyramid sinker, and baits like:
sand fleas + sand flea Fishbites
blowworm/sand flea Fishbites
shrimp Fishbites
A few problems I ran into:
my high/low rig kept tangling
I couldn’t hold bottom — the 3 oz pyramid kept rolling in the surf/current
got basically no bites

Now I’m wondering if I should switch to a pompano rig + 3 or 4 oz Sputnik sinker instead.
Main thing I’m targeting is kingfish, croaker, spot, and whatever other smaller surf fish are around.

A few questions:
For Assateague, would you rather use a high/low or a pompano rig for those species?
Are 1/0 & 2/0 hooks too big for kingfish/croaker/spot there?
If the current/surf is moving, would you go Sputnik over pyramid every time?
Any bait recommendations you’ve had success with there?
Just trying to figure out if my issue was the rig, hook size, sinker choice, bait presentation, or if conditions just sucked that day.
