I just saw one ui 9 is avaliable on my s25 ultra. But tbf I dont really know what they changed? Like is there evet anything new?

I am using Tab S10 Ultra updated to 8.5 a while ago. I didnt use my tablet for a long time and it look like this now. Why is this happenning and how can I change it back?
Also, is there really not a single person who proof checks this shitty update?
Maybe i did something wrong but I dont think I can mess up things this badly.
