Can someone please explain what these numbers mean on the operating report?

Is it considered bad that our **actual %** is greater than the **targeted %**?

Is this a red flag for anything to be concerned about? We do inventory daily and we usually end with more cheese than what the inventory calculator estimates. 🤷‍♂️

I'm literally begging y'all to stop ordering stuff crust pizzas... it's a scam. They don't even have a flavor, just order cheese sticks???
