3 weeks after getting it and using it both at home and at work it's time to make a post about the famous "king of nakiri"

First thing you can observe about it is how huge it is, my Iron Horses look almost small compared to this absolute monster of a knife, at almost 300gr it's heavier than most of my deba but like my Iron Horse (I'm comparing both a lot because of their shared DNA) it's pleasantly balanced, using it with a light hand and letting the weight do most of the work makes for a pleasant experience even on extended periods.

The grind is what you'd expect from a great Sanjo blade, nice convexity coupled to this reassuring thickness making it feels very solid, I've been very pleased by it's performance, while nakiri are generally flagged as "veggie knife" I can guarantee you that's it's fantastic with proteins too, I'm not far from 30kg total of diced tuna with this bad boy and many more on the way. Some minor wedging on denser stuff but nothing too surprising, it's otherwise a great cutter. The slight curve on the profile allows for some low rocking too.

The Noborikoi line is exclusive to JNS, the FnF on this blade are almost perfect, Hitohira/Tetsujin level of refinements with spine/choil perfectly polished.

I've sharpened it a bit on a 2000 Chocera (it came atom-splitting-sharp OOTB but didn't fare long against plastics boards) and the steel felt very good, I'm used to great B2 (Togashi/Moritaka/Tamura/Yauji etc..) and was happy to see it was shoulder to shoulder in terms of feeling with the other.

While this beast put a burning hole in my bank account (750€ 🫩) I'm really happy to have it :).

Kogetsu WS1 patina + some thoughts

TLDR: Very nice, would recommend 👍

After 3 months of use (in rotation with other blades) I'm definitely in love with Kogetsu and this blade might be responsible for a big shift in my preferences.

The head of Goko Hamono said that he isn't interested in making something beautiful but rather something for cutting and this is translated perfectly in this blade, the only frivolity you'll find is the brass in the bolster adding a unique touch but other than that it's a straight to business blade.

FnF are good without being too rough or refined (tho wabi Sabi is to be expected on the SK line from what I heard) with the plain look of a monosteel blade.

-Grind

The grind is very thin but not fragile, it gets where you want it to go and both ease, I encountered some minimal wedging on some very dense stuff but other than that the cutting has always been pleasant.

- Steel:

The steel is really really good, easy to sharpen, behaves really nicely on the stones, retention is on par with my Maboroshi which is saying something. It comes with a zero grind something I didn't catch up at first, half of the blade is roughly polished and I just started to vibe with it, each of my sharpening session now include a bit of time flat on the stone following the original polishing marks, the idea of thinning it is already distant enough but even more so with this habit.

The handle is your classic western type handle, on the heavier side with a very nice feel in hand and good finish.

Overall this blade feels very similar to my TF, they share the same philosophy and uniqueness, they definitely belong in restaurants and at the end of the day they are the ones I enjoy the most at work. It's true they also have an insane price compared to some other options floating but that's a whole other conversation, as time goes on I prefer the simplicity and rawness of those blades.

Kashiwa will be on my list for my next Japan trip and will make sure to pay a visit to Goko Hamono, I definitely want a second one (the SK Yo deba is calling me like a siren).

Easily in my top 3 (shoulders to shoulders with my Togashi B2 and my Denka)

One of my recent buying (you can find a posts with all the specs on my profile), thought I'd keep this one for a long time but after much use I just reached out to knives with thicker grinds, now I'm sure Myojin stuffs are not for me.

Never sharpened (stropped with green compound), didn't remove the lacquer on it hence the scratches you can see on some pictures.

The only default is those tiny tiny dots you can see on slide 3, stainless doesn't mean stainwithout but I was still surprised to see those as I've never experienced this kind of oxydation before, I did cut a lot of acidic stuffs with it so this may be a explanation.

Excellent performer but a bit fragile for my taste, beautiful F&F, this is a stainless Tetsujin.

More of a short chuka but more pleasant to use thanks to it's short size, obscenely good steel and very good performance, sharpened 2 times and used quite a bit.

-Masashi Yamamoto Shiroshu Honesuki SLD 150mm - Sold

Flawless FnF, insane steel, letting this one go to get a single bevel honesuki as it fits more with me, scratched a bit on the bevel (sharpening it flat).

Since this one is hard to sell I'll drop the price one last time, bought 439€ on CDC and asking 200€.

I've been playing around with this absolute beast for 2 weeks now (in rotation with some others), when I started collecting JK Nao Yamamoto was a smith that I was seeing a bit more, I remember one of those awesome Hakata form him on Cleancut, the me from the past was put off by the tsuchime but as time went on and my tastes refine I became suite fond of it and here I am 3 years later and there's not much of his work available now.

This 240mm was sitting on Messersljper website since some time now and after searching info on Yamamoto and watching 40 minutes video on him (from which I understood half of it thanks to YouTube subtitles) I was set to grab it.

He's a Dento-Kogeishi cementing a bit more the quality of his work.

First feeling OOTB this blade screams "Sanjo" everywhere, thick spine/workhorse geometry all while being from Echizen/Takefu, I expected a hollow grind too but after checking the bevels are nicely flat.

Sitting at 243gr it's on the heavier side of the knife in my collection, really blade forward with a balance point where the steel kanji are located.

In terms of performance it's your average thick workhorse, really pleasing overall and probably one of my best rocker, it's also stress free to use. That said it's also a wedgy wedgy boy, everything dense cracks on it, I used it in tandem with my new Shinkiro and was a bit sad by how much the Shinkiro was better on dense stuff (that said the Shinkiro felt more fragile).

Food release is really good.

Overall it's not the best performer but it still hold it's ground very just by how pleasant to use it is.

Regarding the steel I didn't put it on the stones but I had some reviews form two friends and others from KKF and here, the consensus seems to be a tricky AS but once mastered it's a treat, I'll see in the coming weeks 👀.

FnF are alrighty, no hard edges and nothing too rustic, I might polish the choil/spine in the future to make it a bit more sexy but we'll see.

Overall I'm really happy with this blade, it fits the same niche as my Maboroshi which is the "stress free" blades, no crazy performance but so easy to use and care which for someone working in pro kitchen like me is really pleasant, I love taking my Myojin/Nishida blades to work but if it's a rush day where I have a ton of stuff to do the Nao and TF (among others) will be my picks just for how little I need to babysit them.

My Metal Flow needed a brother so here it is ! I've been using it at work for a week now (in rotation with two new blades but more on those later) and as expected it's a pleasure.

This is in terms of fnf/grind/style/vibes very Tetsujin-like, the FnF are flawless coupled with a very nicely finished handle.

OOTB sharpness might be the best I've ever seen, splitting reality-level of sharpness.

In terms of use it's what you would expect from a Myojin ground blade, very thin, crazy performance, not very good at rocking and can feel a bit fragile sometime. I was pleasantly surprised to see the kasumi finish wasn't as sticky as I expected it to be, my Metal Flow (even with a nice patina set) is a food magnet and for this reason I don't reach out as much as I'd like to it but the Nao doesn't have this problem.

I'm overall very happy with it and feel like this one is gonna see a lot of action in the future 😌.

I have yet to try it at work but did some meal prep for home with it and it's really pleasant to use, very light in hand and performed really nicely be it on carrots, bellpepper and even slicing tasks (beef heart in this case). Nicely polished spine and rounded choil, being second hand I can't appreciate the original polish work on the blade but no doubt it was very good.

I'm making a new post with updated prices on the Masashi/Yorokobi and adding a Moritaka to the list

1- Masashi Shiroshu Honesuki 150mm SLD:

- Scratches on the primary bevel due to sharpening it flat on the stone.

2- HxN Yorokobi 210mm SLD gyuto:

This one has the old workhorse grind form the first Yorokobi, used as a daily driver at work, handle is stabilized wood and has a crack near the ferrule (rookie mistake)

3- Moritaka AS Kiritsuke 240mm:

My first Moritaka, classic scandi grind with a nice flat profile, it was my go to to destroy anything my nicer blades couldn't handle. Fantastic steel (easiest to sharpen in my whole collection) and just a no nonsense blade all around.

Some of the kurouchi faded a bit and the sticker is worn out.

This one's hard to let go but the I'll stand by my rule of "no use then it has to go".

I came to the conclusion after lots of use that like my deba single bevels are superior compared to their double beveled cousins so I'm letting this one go to buy a single bevel honesuki.

Handle is made out of quince with a ebony ferrule, forged in SLD with a nice semi-mirror polish.

The primary bevel features some scratches (see pics) due to sharpening (as you need to lay it flat on the stones it get scratched up right away) other than that you have a blade with flawless fnf with a polished spine and choil and beautiful nickel damascus

I bought this one for 439€ on CouteauxduChef and looking for 300€ + half of the shipping (shipping from France)
