60ml Chocolate malt simple syrup with 50% sugar and 50% monks fruit, cocoa, vanilla, and malt flavor
240ml Barista oat milk
105ml moka pot dark roast
Whipped cream on top

Used the king Arthur recipe, subbed 3/4 of the water for strawberry compote and 1/4 for milk. Made a lemon honey cream cheese to go with.

Made this cake for my adopted "auntie" in memory care, and her neighbors. I'm finally hitting my stride with decorating, getting faster too!
Well...not perfect...but definitely way improved!
400g bread flour
210g water
30g sugar
12g salt
4g diastatic malt
3g yeast
100g sourdough discard
20sec boil/both sides
Lowering the hydration did it! I also did a cold ferment and reduced the warm fermentation time so they baked from (what looked to me) slightly under proofed.
