Why did the Order use Thestrals for the Seven Potters Battle?

Currently rereading DH now, and I still can't understand why Hermione and Fleur were transported from Privet Drive on Thestrals when Hermione can't see them (I don't recall her seeing anyone die between OotP and then), and we don't know if Bill and Fleur can see them either (though I'm almost certain Kingsley has seen many deaths during his Auror career).

Yes, neither of the girls are good with brooms, but would it not have made more sense to use a creature that everyone is guaranteed to be able to see? Like Hippogriffs; couldn't Hagrid have just brought Buckbeak and one of the other Hogwarts Hippogriffs to do the job instead? I get that Thestrals are known for having a great sense of direction, but hasn't Buckbeak's ability to get Sirius in and out of Britain proven that Hippogriffs are just as effective?

Was there an actual reason why the Order chose Thestrals?
