How the hell are you supposed to kill bosses like Mogdrogen or the Dread?

Fought both several times and every time I've gotten either down to like... less than 10% health they fucking one tap me. The hell am I doing wrong? During my fight with the Dread until he one shot me he never took me down below 30% hp.
