N5 carbone

A few weeks ago I bought a lot of Opinel n8 and the seller threw in this little carbon n5 as a gift. I sharpened it up, not knowing it’d become my best friend within days. It’s always within reach for opening packages, but it really shines as a peeler, and I honestly can’t imagine eating an apple without it anymore. What a great surprise. I will buy carbone n9 to complete my collection of inox.

Aujourd’hui, livraison toute fraîche d’un lot acheté d’occasion : un petit n5 carbone, 2 n°8 inox qui serviront sûrement à transmettre le virus à des amis, un n°8 outdoor, et surtout, “Le Savoyard”.

Avec sa lame de n°8 et son manche de Jardin, ce dernier a tout de suite attiré mon attention : je n’en avais jamais vu avant de tomber sur cette annonce. Il semblerait qu’il ait été commercialisé vers 2005, mais je n’ai pas plus d’informations à ce sujet. Si certains en savent davantage ou en ont déjà possédé un, n’hésitez pas à partager vos anecdotes sur ce couteau. En attendant, il reste pour moi un exemplaire assez “curieux”.

Need advice.

For a few months, I have been interested in the maintenance of my knives, mainly pocket knives used in the kitchen, as well as my chef's knives. I started with a WorkSharp Guided Field Sharpener, which gave me complete satisfaction and allowed me to put any blade back on a razor wire.

That said, I have noticed on a daily basis that I use almost exclusively the ceramic part of the WorkSharp to hold the wire, and very rarely the diamond parts. It led me to wonder if there was no tool more adapted to this specific use.

My question: what materials would you recommend for the regular maintenance of the wire, with a fine grain comparable to the WorkSharp ceramics? I tested the Victorinox Dual, but I find it too abrasive for a simple refreshment of the cutting edge and I had a hard time getting a cutting edge equivalent to what I have on the worksharp.

Bonus point if it is transportable/compact.

My best partner. He cuts, cuts, cuts, cuts… two or three passes on the strop, cuts, cuts, and keeps cutting. Always on me, ready to *cliiiip cliiiiip* and slice through something.

J'ai fait l'achat de mon premier Opinel n°8 inox ! J'ai remarqué que ma virole avait du jeu, elle fait un bruit de breloque quand je pose le couteau et le plus chiant : elle ne reste pas en place, que ce soit pour maintenir la lame ouverte ou fermée. C'est normal ou j'ai un réel peut soucis d'ajustement ? Si c'est le cas, comment on peut ajuster ça ? Merci !
