What ECs should I focus on for university admissions?

Currently in grade 11 (12 in 26/27 year) and I'm looking at applying to UBC, UWaterloo, U of A, and McGill with the below grades:
- Math 30-1: 100 (pre-diploma, I'm assuming it'll go to like a 99 after)
- Chemistry 20: 100
- Biology 20: 100
- English 20-1: 91 (If you have tips for English please share! It's so hard to get a higher grade)
- Social 20-1 (AP European History): 97
- AP Psychology: 95 and 96 (split into 2 3-credit modules)
- Physics 20: currently taking as a summer course but I'm expecting 99 or 100

Grade 12 courses if that helps in any way:
- Math 31 (AP Calculus BC)
- Biology 30 (AP Biology)
- Chemistry 30 (AP Chemistry)
- Physics 30
- English 30-1 (AP English Literature)
- Social 30-1

I want to get into an Engineering Physics major (or whatever the closest is for universities that don't offer it) with a mathematics minor so I can pursue something in the nuclear field after (any recommendations for this is also appreciated), otherwise I'd probably go into mathematics (BSc. Honours if possible, deciding on applied vs. pure) and hope I don't go unemployed in the future. Top choice for me is either UBC or UWaterloo, but it'll probably boil down to whoever gives me the most scholarship money.

My current extracurriculars are:
- Athlete on my school's curling and badminton team (nothing really special, I don't have any awards for sports, though I am trying my best to get into provincials for badminton)
- Student tutor at my school (math and sciences primarily, all volunteer work managed by my school)
- Math Olympics club member (grades 10 and 11) and I'm planning to run the club myself in the upcoming year. Somewhat related but also a participant in UWaterloo's math contests; I received both top 25% and the top score in my school for the Fermat contest this year and plan on doing whatever other contests they have upcoming if I can

As you can probably tell I'm not super strong in ECs; I joined Student's Union in grade 10 but I had some mental health issues that unfortunately kept me out of it and my friends in that club say it's pretty boring anyways. One of my friends is planning on starting a French club, so I'm very likely to join that (I was in French immersion, and plan on taking my DELF B2 sometime this year), and some other friends are also really keen on getting me on Trivia. When the time comes around I'm also going to run for grad historian.

Any tips are greatly appreciated, and thank you for looking at my very long post! And if you've noticed my account is super new, it's because I just created it for the purpose of asking this...
