Since getting into Japanese knives, my regular chef knives have sat on the rack collecting dust. I figure they deserve to go to a good home, perfect for a first home or anyone wanting perfectly usable blades at a cheap price! They have some marks from a magnetic knife rack but have all been kept very sharp.

25cm Procook Elite AUS8 Bread knife. Recently just resharpened by sheffield sharpening shed and handle oiled. This model has been replaced by the Elite AUS10, but this is just as good. £25

25cm Victorianox Fibrox Chef Knife. Almost mint, bought at the start of the year and used to carve two sunday roasts. £20

20cm Victorianox Fibrox Chef Knife £20, my main knife for years. Learned to sharpen on it, it's got plenty of use but has been recently brought up to 3k and is as razor sharp as the steel will allow. £15

Originally purchased from KFJ here in the UK and recently fitted with a custom stabalised masur birch handle by Josh at Letshandle this. It's seen some light use, a little blue patina developing on the core. Never sharped, only kept the edge with a strop. The handle is absolutely stunning and I love the double ring look!

I'm looking for either a cash sale at £295 or trades for other gyutos at 210-240mm. Based in the UK. Willing to ship worldwide via UPS and mark down value to avoid taxes etc. Plenty of success deals on here so far. 🤟

[WTT][UK/WW] Nigara Aogami Super Kiritsuke Nakiri 18cm Wenge Handle

Purchased off marketplace at the start of the year, this K-Tip Nigara Nakiri has litteraly sat in its box since getting my Shiabata. It's been used on a hand full of potato's and is in near mint condition, almost no patina on the edge. Its only been touched up on my black ceramic rod and given a light strop between uses.

Would consider trades for knives at a similar price point, around the £240 or $300 USD mark. I know these are sold out in the US so maybe a good chance for someone to get one over there? I'm particularly after the following but always happy to try something new.

NKD! Hado Ginsan 240mm Gyuto and some veggie burgers.

Thanks to all who responded to my post looking for a 240 gyuto! Thanks to I've now been sorted with a ginsan Hado and I'm in love 😍 Light, thin hollow grind and flies through food like it isn't there. Just awaiting a sexy new handle and it'll be done.

Not a lot of prep on this one tonight but did well on veggies and pickles for tonight's black bean smashburgers. 😍

Stunning 150mm blade, proper laser. Cuts like my nakiri even though its not as tall. Only selling as I don't use pettys that much. I've a sentimental attatchment to my Masakage and don't need two of them. Ordered straight from Shibata, got absolutely hammered on import and just trying to get back the £225 that I've spent on it. 300 usd or 265 euro. Near perfect condition, arrived new only a week ago. I've a great big lonely space on the block since selling my matsubara... so i'm looking for another 240mm gyuto! Preferably with the prominent wide bevel look. Kagekiyo, Hado Junpaku, Hitohira Ren etc. BUT 've got the itch for another 240 so very open to ideas! Saji rainbow, Nigara, Yoshikane all on my list to try... so try me!

NKD! Nigara 180mm Damascus Tsuchime Bunka - Shoutout to TheWoodLibrary!

Thanks to u/TheWoodLibrary for a great deal on this Nigara Bunka. I had one of these a while ago and regretted selling it! I'm not a bunka fanatic but it's A, nice to have one in the collection and B, cool to own something made by Nigara. Being VG10 these seem to be great value used at just over 100 quid. F&F is stellar and it'll be put to good use tonight prepping some sag aloo!

I'd like to give a massive recommendation to this seller. Fast negotiation, great price, super fast shipping and he was kind enough to shrink wrap it and include a Japanese KitKat. Top bloke!

My Masakage petty. Four months after buying my second knife and the begining of my journey.

Having only been into Japanese knives since the start of the year, I've only had my hands on a dozen or so decent blades, but each time I buy, try and or sell something I learn a little more about them and a little more about me. My first blade was a Myabi 5000. I figured I'd completed the search. It had everything my newbie mind could ever imagine being important... lots of wavey damascus lines and SG2 Steel was obviously the best because chatGPT told me it was. Christ.

This Koishi Masakage was the first petty I ever bought and my second ever Japanese knife. I fancied a paring knife and it just so happened to be the only one available on the UK site I was shopping on. It didn't have a flashy Damascus pattern but I figured it was worth a shot. As soon as it arrived, I appreciated its hand crafted nature over the previous. The fact that it didn't look like the identical to other one for sale, the black koishi finish, the beautiful hammering texture. I realised then this was going to be the start of something expensive and irresponsible. Having a custom handle ordered was a fantastic process that helped tweak it to my tastes and make some new contacts.

Fast forward a few months and my preferences are starting to refine as I try more blades. I know now that I like a certain weight, grind and have a real soft spot for a true laser. While this little petty isn't one i'm going to pick up on a regular basis after finding more preferable knifes, it's a knife that I'll display with pride as the first step down the rabbit hole (and the first knife to send me to the ER after underestimating how sharp these things are). I'm on mastersharpeners daily, I refresh the BST thread hourly and any spare headspace is now consumed by what 240mm gyuto do I want. Consider me hooked.

As a complete anorak, I've had many hobbies over the years. Some cheap, some expensive (cameras, guitars, coffee) but there's something unique about this one. Aside from the endorphine rush of spending money on a new shiney object, that's often the driving force of rampant consumerism, buying and collecting these things is far more personal. They're a display of our fantasies, quirks and lack of impulse control. In so many ways, they're a reflection of us.

TL:DR i got a petty and decided to write a Grey's Anatomy script about it.

As new condition, litteraly been used to chop an apple. 😆 Came with a really nice dark rosewood handle (even though I ordered it blade only).

Ordered this direct from Shiabata as I couldn't find any online when I wanted to buy one. Paid £170 and got hammered on import at £70. (I'm in the UK) I'd like as close to £220 back as possible which is around 280USD or 240EURO Happy to ship WW at buyers cost, and mark low value/gift. New to the thread but have had successful sales on here.

Patina on my Shiabata AS Nakiri 😍

I've had this Shiabata nakiri for a few months now and i'm so happy that I grabbed a reactive version. The AS going through some awesome colours as I use it 😍

Cuts like there is no spoon (matrix reference) and I had a handle made by Letshandlethis here in the UK. Burl honduran rosewood. My go to now for potatoes or dense veg!
