Oat pecan brittle cookies

Made these cookies again - it’s been many years since I last made them and I forgot 1. How much of an ordeal these are; 2. How absolutely worth it they are. They are the best, tastiest cookie I have ever made (and I have made many cookies!!). A few notes if you haven’t made these before but are considering it -

  1. Prepare to dirty your entire kitchen - you’ll need multiple sheet pans, a food processor, your stand mixer, 2 saucepans, and a cutting board. I suggest recruiting someone interested in cleaning in exchange for cookies to help!
  2. I would incline toward under toasting the pecans rather than over toasting them. You do not want them to burn, as the pecan brittle is both folded into the batter as chunks and also ground up to become part of the dry mix (so any burn flavor will really permeate the entire cookie if the pecans are toasted too much)
  3. This is a great recipe if you are interested in learning new baking techniques - you’ll brown butter, make a caramel which then becomes the pecan brittle, etc. It’s a really great project that teaches you a lot about different baking techniques, while resulting in a fantastic final product.

Major regression at 13 months

We have been doing lazy EC with my daughter since she was 4 months old and at first we were very successful. At 6 months I would say we were catching 80% of her poops in the potty and she almost always peed when we took her. Starting around 7 months we’d have short lived regressions when she was teething where she’d refuse to sit on the potty, but it always passed.

For the last month or so, pretty much since she started walking, my daughter refuses to poop in the potty. She will sit on the potty but she is constantly distracted, squirming around, looking for something to play with. We moved her potty station to a different bathroom with fewer distractions, and that seems to be helping with the squirming, but she still is really not pooping. She will poop in her diaper sometimes 5-10 minutes after sitting on the potty.

It’s obviously frustrating, because we were so successful for so long. She’s prone to really bad diaper rashes - one of the reasons we did EC - so the increase in poopy diapers isn’t helping there. I’m not sure what to do. I am trying not to pressure her and keep it casual but sometimes it is hard to conceal my frustration.

Is there anything I can do here? I’ve considered diaper free time to see if that helps but I’m not sure if that’s the right approach. Do I just keep doing what we’ve been doing and hope this phase passes?

English muffins for Fathers Day

First time making Claire’s English muffins. Used them to make bacon, egg and cheese sandwiches for Father’s Day. I pressed the slab too thin but otherwise these turned out great!

I wanted to post about this book as it’s one of my most used and I never see anyone talk about it on here! My mom, brother, sister and I each own our own copy and cook from it regularly. There are so many recipes I repeat often - I’m currently making the Coconut Curry Chicken & Rice Noodle Soup and it’s a hit every time. I’m sharing a few of my favorite recipes - really recommend checking this one out!
