Does anyone have unique or unconventional interview questions that elicit meaningful, unrehearsed responses?

I'm currently hiring to backfill an analyst position. An issue I've encountered in the past is that during a typical behavioral interview, candidates will have anticipated most of the questions and rehearsed answers they believe I want to hear. As a result, when I hire someone, it often turns out that the responses they gave in the interview have very little correlation to reality. Even the ones who turn out to be great employees are great in ways I would never have expected from what they said in their interviews.

I've gotten pretty good at assessing skills and knowledge over the years, but I feel like assessing personality/fit is an area where I need to improve. Does anyone have advice?
