Water Keifer

My water Keifer first ferment goes great. But I cannot seem to get my second ferment going at all. I’ve done juices and fruits. Both options end up flat.

First ferment goes great- 1/4 cup grains, 1/4 cane sugar, water.

Second ferment- 1/4 cup juice and 4 cups Keifer

Goat yogurt

Has anyone successfully made thick Greek style yogurt using whole goat milk? Every time I make it I strain for minimum of 4 hours up to 24 and it’s just not getting to the thick consistency

In pot cook until 185
Cool to 110
Mix in the yogurt culture/milk
Keep in dehydrator at 110 for 6 hours
Put in fridge overnight
Strain for 4-6 hours
