Chubby but lively

Looking for somewhere that is a bit more lively, not a party vibe, but not so quiet. Thinking some activities where people mingle, staff is more talkative and friendly, etc.
-tropical, not Mexico
-less than 4 hours direct from Houston
-adult-only or leans towards adults

Frequently I find that at a lot of the St. Regis and FS are more quiet with seen-not-heard service. While I think this has a time and place to be appreciated, that isn’t the goal for this next trip in November.

Starting to look into a trip to Mongolia for summer 2027. It seems a guided tour may be the way to go. Has anyone used any of the below tour operators or gone a different route and can share their experiences?
