Need help planning delayed honeymoon in San Diego (ish)

My husband and I got married during the fall of 2021. For global reasons, we had a small, local ‘mini-moon,’ and said we’d do it for real “in a few months when it all blew over”

We have been gifted a week’s stay in a 2-bedroom villa at The Hyatt Vacation Club at The Welk for our five year anniversary, and are excited to finally have our honeymoon!

All that being said, we’ve noted that the resort is a bit of a drive away from its advertised “San Diego” location, and doesn’t have a ton of on-site options for food and entertainment.

We’re looking for any suggestions or tips on things to do or places to go in the area. We have a car, and we’re not opposed to driving some- but would prefer to not spend the whole trip burning gasoline.

We as a couple really enjoy trying new things, enjoying pretty sights, exploring quaint shopping districts, dining at nice restaurants, swimming/snorkeling, and generally just going on adventures together. We’ll also have a kitchen in the villa, so we’re not opposed to cooking, given a recommendation for a nice market to shop at.

TLDR; romantic long delayed honeymoon near Oceanside/Temecula/San Diego, looking for recommendations for activities and restaurants.

(Disclaimer: not looking to change hotel or get opinions on timeshares. It belongs to my MIL, she just gifted me the stay and we decided the cost saved on lodging could go to activities)
