Rate my 8-day relaxed Iceland loop

Hi everyone,

I'm traveling to Iceland for 8 days at the end of August with my son. We aren't big into hiking, we mostly prefer scenic roadside sightseeing, cool geology, and finding great places to eat.

Here is the rough plan:

Day 1: Land at KEF around 16:45, grab the rental car, and drive out to the Golden Circle area to sleep.

Day 2: Do the main Golden Circle spots (Geysers, Gullfoss, Kerið Crater) and stay somewhere nearby.

Day 3: Head down the South Coast. Stop at Seljalandsfoss, Skógafoss, and the Reynisfjara black sand beach. Staying in Vík.

Day 4: Drive past the Eldhraun lava fields over to Jökulsárlón Glacier Lagoon and Diamond Beach. Staying the night in Höfn.

Day 5: Drive through the Eastfjords. Trying to decide whether to stay in Egilsstaðir or head down into Seyðisfjörður.

Day 6: Drive to Lake Mývatn to see the Hverir mud pots, then hit Goðafoss on the way to Akureyri for the night.

Day 7: The big driving day. Going all the way from Akureyri through horse country down to a hotel right by KEF airport so we are positioned for our flight.

Day 8: Relaxed morning exploring the Reykjanes Peninsula close to the airport, then drop the car and catch our 17:25 flight home.

A couple of quick questions:

  1. Is Day 7 from Akureyri down to KEF too much of a slog for one day? I am worried about that.
  2. Since we love good food but aren't doing major hikes, any can't-miss restaurants, local bakeries, or roadside cafes along this route?
  3. This is late August. I am assuming we should have no problems with weather or driving conditions. Is this a good assumption?
  4. Also worried about Midges. Should I be?

Would you make the move move without visiting?

Came across this CNN article about a single mom who left Portland for Bavaria because she was "Exhausted by the pressure of having to balance work, childcare, healthcare and finances, and she felt unsupported as a single parent" But she did it without visiting first. Just took a leap of faith. Was she crazy? Did any of you do something like that?

Anyone else worrying about the US Debt crossing 100% of GDP? Are US investments still a "safe haven"?

Just saw that US debt officially surpassed 100% of GDP. How much of a red flag is this? I believe it is the first time since WW2. Is anyone diversifying into non-USD assets, or is the plan just to ignore the debt and hope for the best?
