Which raft do you keep?

I've been making basic red wine vinegar since 2020, with the same container and same mother, and I always notice there are two rafts at the end. One on the top, one on the bottom. Generally with different textures.

Which one do you keep? What textures do you look for in a healthy mother?

Picture of my most recent batch, the top raft was very soft and almost crumbled on the touch. The bottom was firm and dense.

Watch vs treadmill distance

At lower mileage (sub 5k), the treadmill and watch distance +/- .1, but as I get out to 10k, the gap is .72 off ( 6.22 treadmill vs. 6.94 watch) I assume the watch distance calculated off my stride length would be more accurate. I try to run a mix of treadmill and outdoor running, but with the heat, it's harder to get outside. I calibrate the watch if it gets more than .2 off.

Generally, which do you usually default to as a guide for performance, treadmill or watch distance?

Shoes for a white dinner jacket Tux

Im getting married in a few months and landed on a "custom" (M2M) tux, white dinner jacket, shawl collar, black pants (w/ satin braid) but I'm unsure about the shoes.

The wedding is not black tie, no white dress. It's a mix of indian and Western, think fun lively summer bright colors, no dress code. I feel like the traditional patent leather shoes might be too formal, but matte black or loafers might look off.

Any thoughts? Appreciate in advance.
