Winter holiday in Sardinia: East or West!?

I have read on here some recommendations already but I'm hoping for a bit more advice.
My family and I are landing in Sardinia around December 29th. We will stay for one week all together with my parents and then one week separate (2 weeks total). But these questions are just related to the first week as I'm helping my parents plan the best winter holiday that they can have.
I was originally thinking the East Coast specifically the Gulf of Orosei and places such as Santa Maria Navarrese, Baunei, Tortoli, Barisardo, Lotzorai. But now I'm thinking that the West Coast has a bit more going on potentially in January... I don't know the West Coast very well so looking for an opinion here too!
Another question is whether Cagliari is worth it? I've watched a few videos and it looks nice but at the same time I've been recommended NOT to go there.
Key things to keep in mind:
- we like history, nature, potentially renting bikes, potentially skiing, potentially kayaking (all if the weather permits), eating local food, drinking at local spots, we don't like touristy places, natural hotsprings, markets, old architecture, and we like a good view of either water or mountains.
- we will have a rental car but don't want to do much driving if possible.
- ideally places that aren't super expensive to stay in!
