Just had Carbon Copy’s Buffalo Chicken pie and it was absolutely perfect. Great balance between the spice and the sauce. Can’t recommend it enough.

Found a 10 pounder at Reading Terminal Market in Philly, couldn’t resist. Put it on at 9 pm Friday night. Wrapped it around 10 am and then took it off to rest around 2. Kept it simple this time- didn’t trim it, didn’t go overboard with the dry rub. Some was a bit dry but the smoke ring and bark were just what I wanted. The coffee in the dry rub adds a ton of flavor and really helps with the bark.
