First time using the foil boat method

It came out decent. The bark was killer, but the flat was a bit more dry than my usual butcher paper wrap.

Mustard binder with coarse black pepper and Bearded Butcher Black seasoning.

Threw it on 11pm last night at 225F, put it in the foil boat and turned the heat up to 260F with tallow at stall around noon, pulled at 206F around 4pm and rested in the oven until dinner at 6:30pm.
